SPIRALIZED VEGGIE PAD THAI
Ingredients
- For the sauce:
- 3 tbsp. fish sauce
- 3 tbsp. brown sugar
- 3 tbsp. chicken broth
- 2 tbsp. rice vinegar
- 2 tbsp. low-sodium soy sauce
- 1 tsp. Thai chili paste
For the noodles:
- 4 ounces or half a box brown rice noodles (Pad Thai noodles)
- 2 large zucchini
- 2 large, thick carrots*
- 2 tablespoons olive oil, divided
- ¼ yellow onion, cut into lengthwise strips
- 2 cloves garlic, minced
- 2 eggs, lightly beaten
- 1½ c. bean sprouts
- 2 green onions, chopped, divided
- ½ c. roasted peanuts, chopped
- ¼ c. fresh cilantro, chopped
