SPIRALIZED VEGGIE PAD THAI

Ingredients


  • For the sauce:
  • 3 tbsp. fish sauce
  • 3 tbsp. brown sugar
  • 3 tbsp. chicken broth
  • 2 tbsp. rice vinegar
  • 2 tbsp. low-sodium soy sauce
  • 1 tsp. Thai chili paste

For the noodles:

  • 4 ounces or half a box brown rice noodles (Pad Thai noodles)
  • 2 large zucchini
  • 2 large, thick carrots*
  • 2 tablespoons olive oil, divided
  • ¼ yellow onion, cut into lengthwise strips
  • 2 cloves garlic, minced
  • 2 eggs, lightly beaten
  • 1½ c. bean sprouts
  • 2 green onions, chopped, divided
  • ½ c. roasted peanuts, chopped
  • ¼ c. fresh cilantro, chopped
